How to cook a summer cake with berries, a recipe
Mix of any seasonal berries - 600 gr.
Meringue cakes - 4 pcs.
Cream cheese or fat cottage cheese - 200 gr.
Cream - 125 gr.
Sugar icing - 50 gr.
Rum - 1 tbsp. l
For the pie:
Flour - 250 gr.
Powdered sugar - 50 gr.
Butter - 125 gr.
Egg - 1 pc.
Milk - 2 tbsp.

Mix flour and icing sugar in a deep bowl. Add diced cold butter and grind to a crumb. Add egg, milk and knead the dough. Roll it into a ball, wrap it in plastic and put it in the cold for 2 hours.
Roll out the ripe dough on a floured surface. Grease the baking dish and lighten it with dough, forming the bottom and sides.Excess dough gently cut.
Pierce the dough in several places. Cover it with parchment paper and fill it with dry beans or rice so that the dough does not rise during baking and there is a cavity for the filling.
Bake 10 minutes at 180 degrees. Then remove the beans and paper, and bake another 10 minutes, until golden brown. If you miss the golden crust moment, the cake will dry out and the soft shortcrust dough will turn into a hard cake.
While the base of the berry cake cools a little, prepare the filling.
Whip cream and cream cheese with powdered sugar, vanilla and rum into a homogeneous air mass. Break the meringues into pieces and mix with the cream. Fill the cake with the finished cream, put the washed and dried berries on top.
Before serving, dust the berries with powdered sugar.
